150g digestive crackers

50g cup brown sugar

1/4 teaspoon salt

100 g unsalted butter

3 block cream cheese

130 g powdered sugar

500 g heavy whipping cream

1 tablespoon lemon juice optional

1 1/2 teaspoon vanilla extract


Place digestive crackers crumbs, brown sugar and salt and stir to combine

Add melted butter and mixed until evenly combined

Mix a 9 inch pan with non stick spray and then press mixture into the bottom

Place cream cheese and powdered sugar into large bowl and beat until smooth

Whip cream put in food blender and blend until hard. (Last time make butter not successful)

Do not put the water in the whip cream
Put cream into cream cheese and sugar whip in lemon juice and vanilla extract until mixture

looks fiffy and can hold stiff peaks
Transfer filling to prepare pan and smooth to even later
