Hokkien Zong Zi

It is Duan Wu Jie. Everyone is making Zong Zi. During COVID-19, everyone is staying at home, so everyone is actually cooking.

During Duan Wu Jie, you can buy zong zi from NTUC and other restaurants.

Ingredients

Rice

600 g glutinous rice

Seasoning for rice

Some cooking oil

10 cloves garlic 

2 tablespoon dark soya sauce 

1 tablespoon light soya sauce 

1 tablespoon oyster sauce

1 teaspoon sugar 

Filling

500 g pork

Some oil

6 cloves garlic 

50 g dried shrimp

10 shitake mushrooms 

12 to 15 chestnut optional

2 homemade Chinese sausage 

2 homemade la lou

6 homemade salted egg yolk optional

1/2 cup fried shallot crisps optional

Marinade for meat

3 tablespoon dark soya sauce 

1 tablespoon light soya sauce 

2 tablespoon oyster sauce 

Some ground white pepper 

1 teaspoon five spices powder 

1 teaspoon sugar 

24 to 30 pieces of bamboo leaves

1 ball natural fiber strings

The day before 

If not using pressure cooker, soak rice for at least 4 hours or overnight 

Place meat and ingredients and marinate overnight 

soak mushrooms, chestnuts, dried shrimp

Prepare the leaves

place leaves in pot and put water

place bowl on top of leaves

add 1 tablespoon of oil and bring it to boil

Boil at low heat for 1/2 hour

Remove and soak leaves overnight

Cook the meat 

Preheat a pot

Add cooking oil and stir fry

add dried shrimp, mushrooms and chestnut

Add meat and stir fry until meat turn color 

Stir fry the rice

Preheat a large wok

Add oil Stir fry garlic until fragrance 

Add rice followed by all seasoning

Stir fry until slightly sticky.

Cooking with pressure cooker

Bring water yo boil

Add 1/2 tablespoon salt

Place bak chang in inner pot

Cover the lid

Turn steam relieve valve to seal

Press pressure cooker and make sure it is on high pressure

Set timer for 50 minutes 

Release pressure immediately 

Boiling on stove

Bring large pot of water to boil

Add 1/2 teaspoon salt

Place bak chang in large pot

Bring it back to boil

Cover and lower heat and heat for 2 1/2 hours

If it does not fall from leaves, it is done.
